A contemporary chapter in Kimpton Tsim Sha Tsui’s culinary story
Hong Kong, 8 Jan 2026 – Global branding firm Eight Partnership brings its work for Kimpton Tsim Sha Tsui Hong Kong to a finale with the introduction of Hillside, the hotel’s all-day restaurant, shaping a culinary identity as a modern third culture kitchen.
Located on the 12th floor with its entrance through a bar, Hillside accommodates 180 guests across communal seating, before tapering into private dining rooms. Bringing decades of expertise, Chef Logan Thomas Hester leads the menu with an ingredients-focused lens and a culinary flair shaped by his international career across the United States, Vietnam, and Hong Kong.
The restaurant springs to life each morning with a multicultural breakfast spread and live cooking stations. Inventive lunch dishes carry the experience forward, while evenings see Chef Logan’s gourmet artistry in full display. Seasonality and culinary creativity anchor the offerings at every hour, ensuring a dining experience that remains consistent in quality while inviting guests to explore new flavours throughout the day.
Eight crafted the brand identity for Hillside, inspired by nearby Signal Hill Garden, a historic geographical landmark, and shaped it into a visual and metaphorical anchor. The resulting design language strikes a balance between heritage and freshness: undulating typography echoes the slope of the hill, a farm-to-table-inspired colour palette starring Pine Green nods to ingredients’ local roots, and collaterals blend archival photography with bold graphic statements. Together, they form a visual identity that feels rooted yet forward-facing, reflecting the heart of the cuisine itself.
“All-day dining at Hillside is about rhythm, memory, and rediscovery,” says Chef Logan. “Every detail—sensory and culinary—is honed to resonate with that feeling of something you’ve known all your life, but are tasting again for the first time.”
“Hillside redefines what all-day dining means in a luxury hotel,” adds Chris Fjelddahl, Partner at Eight Partnership. “It’s not merely a convenience, but a destination with its own point of view. The experience here is grounded in the warmth of the neighbourhood, yet bold enough to firmly hold its own in the scene.”
Hillside joins a thoughtfully composed F&B portfolio at Kimpton Tsim Sha Tsui Hong Kong, alongside Michelin-starred chef Vicky Lau’s precision of JĪJĀ, the rooftop glow of Swim Club, the hush of High Dive, and the charm of Birdsong. Together, these venues shape a hospitality narrative that is both global in reach and deeply connected to Hong Kong—a place where design, cuisine, and community converge with unmistakable heart.
